Michelin-starred chef Niall Keating's stunning Staffordshire Day brunch recipe

People are invited to celebrate Staffordshire Day by recreating a delicious recipe for Staffordshire oatcakes designed by renowned local chef Niall Keating from Lunar Restaurant.

Staffordshire Day takes places on 1 May each year and is an opportunity for residents to share their pride and celebrate all that is great about the county. This year, two Michelin-starred chef Niall Keating has created an exclusive recipe for the Staffordshire Day celebrations that residents can recreate at home. The award-winning chef, known for his innovative culinary creations, has crafted a dish that celebrates the traditional flavours of Staffordshire oatcakes.

Niall Keating, Chef Director at Lunar Restaurant, said:

“I’m happy to be able to contribute to the Staffordshire Day celebrations by creating this recipe. As a chef, I’m always looking for inspiration in local produce and Staffordshire oatcakes are a fantastic example of the county’s culinary heritage.

I’ve created a recipe that is easy to follow and showcases the great flavours of Staffordshire. I hope residents enjoy making it as much as I did.”

Keating’s recipe uses locally sourced ingredients to create a classic oatcake recipe. The dish features a delicious combination of Staffordshire cheese from Dalton’s Dairy, streaky bacon from Perry's of Eccleshall and is topped with Niall’s specially made Paradise Carriage Disco Sauce. To complement the oatcakes, Lunar's bar manager, Dominic Harvey, has also created a Grape Must Collins cocktail, making it the perfect brunch combination to enjoy with friends and family.

Philip White, Staffordshire County Council’s deputy leader and cabinet member for economy and skills, said:

“We are delighted to have Niall Keating, one of Staffordshire’s most talented chefs, create a recipe that celebrates Staffordshire’s rich culinary heritage.

The Staffordshire oatcake is a much loved dish, and this is a great opportunity for residents to come together and celebrate Staffordshire Day with a delicious brunch featuring some of the county's best-loved flavours."

Everyone is encouraged to try Keating’s Staffordshire oatcake recipe, whether they’re from the county or beyond. The county council would love people to share their creations on social media by using the hashtag #StaffordshireDay.
