Refrigerator Cake

Question:
Refrigerator Cake
Answer:

Ingredients

  • 250g digestive biscuits
  • 150g milk chocolate
  • 150g dark chocolate
  • 150g golden syrup
  • 100g marshmallows, small

Instructions

  1. Use cling film to line a 20cm shallow, square-shaped dish. Leave extra cling film hanging over the sides.
  2. Crush the biscuits into pieces using a rolling pin. (Put them in a plastic bag first so they don't go everywhere!)
  3. Put the broken biscuits and marshmallows into a separate bowl.
  4. Add the chocolate, butter and golden syrup to a heatproof bowl set over a pan of simmering water. Stir. Be careful, the bowl will get hot.
  5. Pour the chocolate mix onto the biscuits and marshmallows and mix well.
  6. Pour the whole mixture into the cling film lined dish and level the surface by pressing it down with a spatula. Cover the top of the mixture with the excess cling film.
  7. Leave to cool, then put in the fridge for 1-2 hours to set.
  8. Turn out the cake and peel off the cling film. Cut the cake into 12 squares and enjoy!

Swaps

Dried apricots, raisins, honeycomb and meringues are other tasty fillings! Chop them into small chunks and mix in with the melted chocolate.
