Vegetarian Chilli

Ingredients

  • A selection of vegetables, washed, peeled and chopped. (See Extras for ideas)
  • 1 tin kidney beans in chilli sauce (or any beans, see Extras)
  • 1 tin of chopped tomatoes or 400g passata
  • 400g rice
  • Pinch of chilli powder - or a fresh chilli chopped fine
  • (Optional) Salt and pepper

Instructions

  1. Heat oil in a large saucepan. Add vegetables.
  2. Heat for 10 minutes, stirring to stop vegetables from burning.
  3. Add beans, tomatoes and chilli. Simmer until vegetables are soft.
  4. At the same time, cook the rice. Read the instructions on the packet.
  5. Once both are cooked, serve on a plate or in a large bowl.

Extras

Some examples of the vegetables you could add:

  • Bell pepper
  • Red onion
  • Courgette
  • Mushrooms
  • Sweetcorn
  • Aubergine
  • Tomatoes
  • Sweet potato
  • Carrots etc.

This is a very easy meal that can use any ingredients you have. You can even add it to wraps with some cheese or sour cream!
